Zucchini Salad Recipe
Ingredients:

1 sweet red pepper; cut into 1/8-inch strips
2 tsps of salt
6 zucchini (medium, 1.5 lbs); grated
2 Tbsps each of dill & parsley (fresh); chopped
1 carrot (large); grated
1 red onion; sliced thinly
1 stalk of celery; cut into 1/8-inch strips
Dressing Ingredients:
1/4 tsp of pepper
1 Tbsp of olive oil
3/4 c of mayonnaise
1 Tbsp of honey
2 Tbsps of mustard (Dijon)
1 tsp of horseradish
Directions:
Combine the zucchini with salt in a medium-sized bowl. Toss it well. Transfer the seasoned zucchini to a colander; and then set it aside for approximately half an hour.
When ready, wash the zucchini under cold water; and then drain. Squeeze excess fluid out. Pitch the zucchini into a large bowl followed by the grated carrots, red bell pepper, celery and sliced onions. Toss it well; and then sprinkle with dill and parsley. Set it aside.
Meanwhile. in a small mixing bowl, combine all the dressing ingredients and whisk well ’til smooth. Pour it over the zucchini salad. Toss well and then serve. Season with additional salt and pepper according to desired taste.
