Zesty Fruit Salad Recipe
Ingredients:
2 navel oranges (large)
3/4 tsp allspice
3pcs kiwi fruit
2 pints strawberries; halved & calyx (the cuplike part where the fruit is attached) removed
2 to 3 inches cinnamon sticks
2 grapefruits (large, pink)
1 to 16 oz can peaches
1 pineapple (small)
2 Tbsps of ginger (crystallized)
Directions:
Separate the peaches from the syrup. Place the syrup in a small saucepan while pitch the peaches into a mixing bowl.
Place the saucepan with peach syrup over medium-high heat. Add the allspice and cinnamon. Bring to a boil. Lower the heat. Cover the saucepan and let the syrup simmer for approximately 8-10 minutes. When done, remove it from the heat and let it cool.
Meanwhile, pitch the pineapple chunks into the bowl with peaches. Afterward, grate the rind from one orange, and set it aside.
Peel the grapefuit, as well as the oranges. Remove the membranes; pull the segments apart; and peel the thin outer covering to reveal the pulp.
Cut the peeled segments crosswise into 1/2-inch pieces and pitch it into the bowl with peaches. To capture some of the juice, peel the fruit segments just above the bowl.
Combine the grated orange rind to the fruit mix, to be followed by kiwi and strawberries. Pour the peach syrup; and then toss well. Cover it with cling film and chill for a minimum of two hours.
When ready, drizzle the fruit mix with peach syrup. Toss lightly and garnish with crystallized ginger prior to serving.
