Tuna Turner Salad Recipe
Ingredients:
2 cans of tuna (6 ounces each)
3 celery stalks; cut into small cubes
1 onion (medium-sized); diced
4 garlic cloves; finely chopped
1/2 red bell pepper; chopped
1/4 tsp of ground black pepper
1.5 c of mayonnaise
2 c of bread crumbs (seasoned)
1 c of chicken stock (or bouillon)
1 head of chicory lettuce
1 lemon, sliced into wedges
Parsley (fresh); chopped
Paprika
Directions:
Mix the tuna, celery, onions, red bell pepper, and ground black pepper in a small bowl. In a separate bowl, combine the chicken stock and crumbs. Add this to the tuna mixture and whisk well. While whisking, pour the mayonnaise little by little.
Form a bed of chicory on a salad platter, then assemble the tuna over it. Pretty up the salad w/ lemon wedges around the edge. Add a dash of paprika & sprinkle w/ parsley before serving.
