Tapenade and Tomato Salad Recipe
Ingredients:
3 Tbsps of capers; w/ liquid
1 garlic clove; smashed lightly
4 fillets (anchovy); w/ oil
1/2 c of black pitted olives (preferably oil-cured or “calamatas”)
1/4 c of olive oil (Extra Virgin)
2 lbs of tomatoes
1 c of basil leaves; torn
Salt
Black pepper; ground
Directions:
Combine olives, garlic, anchovy fillets, and capers in a food processor. Press switch only twice ’til mixture is coarsely blended.
Gradually add the olive oil as you pulse the appliance. Combine the chopped tomatoes, basil and a dash of pepper and salt with the tapenade. Pulse once, then transfer to a small bowl or large jar.
Chill before serving.
