Squash Bash Salad Recipe
Ingredients:
2 zucchini (small); trimmed
4 oz Parmesan cheese; shaved
2 yellow squash (small); trimmed
Salt & pepper
1/4 c of lemon juice 9 (fresh)
2 Tbsps of olive oil (Extra Virgin)
1 arugula (large bunch); trimmed, rinsed & spun dry
2 Tbsps of parsley; chopped
1 tomato; core removed
Directions:
Pitch the yellow squash together with zucchini into one large bowl; then set aside.
Meanwhile, pour the olive oil and lemon juice into a small bowl. Thoroughly whisk it, then add pepper and salt to season. Pour it over the vegetable mix.
Toss well, then set aside for at least 15 minutes. Add the shaved Parmesan, afterward; then toss lightly. Chill for a minimum of one hour.
Decoratively arrange the arugula leaves on a shallow salad platter. Top it with tomato wedges, and the vegetable mix. Drizzle it with some dressing to moisten and glaze.
Toss lightly, then sprinkle it with chopped parsley.
