Spinach and Cranberry Salad Recipe
Ingredients:
1 bunch of spinach; washed & cut into small pieces (bite-size)
1/2 c of cranberries; dried
1/2 c of blue cheese; crumbled
2 tomatoes; sliced
1 avocado; skinned, pitted & sliced
1/2 onion (red); sliced thinly
2 Tbsps of jam (red raspberry w/ seeds)
1/3 c of oil (walnut)
2 Tbsps of red wine vinegar
salt
black pepper (fresh/ground)
Directions:
Pitch the dried cranberries, spinach, tomatoes, red onions, avocados and blue cheese into a big mixing bowl; and then toss well.
Meanwhile, in a smaller bowl, combine the red wine vinegar, red raspberry jam, walnut oil, salt and pepper. Whisk well ’til smooth. Drizzle this over cranberry and spinach mixture; then toss well to evenly glaze the ingredients.
Serve chilled.
