Special Pepper Steak Salad Recipe
Ingredients:
Vinaigrette Ingredients:
2/3 c of olive oil (Extra Virgin)
1 tsp of garlic; minced finely
1 tsp of onion; minced finely
1 Tbsp of Italian herb spice blend
1 Tbsp of lemon rind; grated
1/2 c of lemon juice; freshly-squeezed
1/4 tsp of pepper; ground
1/4 tsp of salt
Salad Ingredients:
1/8 tsp of salt
4 oz beef tenderloin
4 oz of mixed greens
1/8 tsp of black pepper
2 stalks of asparagus; trimmed & cooked
3 pcs of cherry tomatoes
Olives (Greek)
Directions:
Combine the olive oil, garlic, onions, Italian herb spice, lemon juice, lemon rind, pepper, and salt altogether in a medium-sized jar. Cover it tightly with the lid and shake vigorously. Set it aside.
Meanwhile, prepare a grill. Rub the meat with pepper and salt mix. Grill the meat ’til the cooked side is medium rare. At this point, turn the meat over for the other side to cook. It takes approximately 8 minutes for each side to cook. When done, cut the meat diagonally into thin slices. Set it aside.
Pitch the mixed greens in a large mixing bowl. Pour about two ounces of vinaigrette to glaze; and then toss well. Transfer the mixed greens to a shallow salad platter.
Decoratively top it with asparagus followed by the cherry tomatoes and Greek olives. Lastly, attractively assemble the meat slices at the center of the salad (or wherever you see fit), and then drizzle with vinaigrette.
May be served immediately or chilled until ready to eat.
