Smoked Eggplant & Yogurt Recipe
Ingredients:
1 pc eggplant (medium); skinned & sliced
1/2 c of water (lightly salted)
1 bunch of onions (green, small); sliced
Salt
1 tsp of black pepper (ground)
1/4 tsp of paprika
1/2 bunch of cilantro; sliced
1 pc of charcoal
1.5 c of yogurt
1 aluminum foil (5×5 inch)
1 Tbsp of margarine
Directions:
Plunge an eggplant into a medium-sized pot of boiling water lightly seasoned with salt. Cook it ’til tender. Once cooked, remove eggplant from the heat and transfer to a shallow platter.
Mash it well and evenly; and then let it cool. Pitch it into a mixing bowl (large) together with yogurt, scallions, pepper, salt and cilantro. Toss it well.
Place a piece of aluminum foil at the center of the bowl. Heat a charcoal over an open flame, and place it onto the foil once it turns reddish. Top this charcoal with margarine.
Cover the bowl at once and allow it to smoke for approximately 10-15 minutes. Take out the charcoal. Chill for a minimum of one hour. Garnish it with the cilantro; then sprinkle with paprika prior to serving.
