Santa Fe Style Chicken Salad Recipe
Ingredients:
1/2 c of ranch dressing
2 stalks of scallions; sliced
1/2 c of salsa
1/2 c of mayonnaise
4 pcs of chicken breast fillets; skinned
1/2 c of salad dressing (Italian-style)
1 tomato (large); chopped
5 flour tortillas (10 inches)
1 head lettuce (iceberg)
1 bag of cheese (8 oz, Mexican-style); shredded
1 stalk of lettuce romaine
Directions:
Whisk the Italian dressing and mayonnaise in a large bowl. Add the breast fillet; and then mix well. Chill; and then marinate for about 6-8 hours (or overnight).
Mix the lettuces well in a separate bowl and equally distribute it among 4 salad platters. Top each with chopped tomatoes, scallions, as well as the cheese. Cover with cling film and chill ’til the breast fillets are ready.
Preheat a stove-top or outdoor grill. Remove the breast fillets from the marinade; then grill it ’til cooked tender. Once cooked, let it cool.
Slice the breast fillets into 1/4-inch strips. Decoratively assemble it on each of the salad platters. Top the salad with crisp tortilla strips.
Blend the ranch dressing together with the salsa using a food processor; and process ’til smooth. Prior to serving, pour some dressing over the salad.
