Salad con Gazpacho Recipe
Ingredients:
Salad Ingredients:
1 cucumber; skinned & cut into 1/8-inch strips
3 stalks of scallions (green onions); chopped
tomatoes (4 plum); divided into 4 parts
1 bell pepper (red); core removed, seeded, & chopped
“Gazpacho” Dressing:
egg substitute
3/4 c of tomato juice
2 fresh shallots; skinned & chopped
1/4 c of red wine vinegar
1/2 c of olive oil (Extra Virgin)
salt & pepper
2 Tbsps of dill (fresh chopped)
A dash of Tabasco
Directions:
Place the “Gazpacho” ingredients altogether into a medium-sized bowl. Whisk thoroughly ’til smooth. Slightly cover it and let it cool in the fridge for about an hour ’til it thickens.
Using a separate bowl, mix the salad ingredients altogether. Pour over some “Gazpacho” over it; and then toss well to coat the vegetable salad evenly.
Serve chilled.
