Roasted Potatoes in Mustard Dressing Recipe
Ingredients:
1/4 c of cilantro leaves (fresh); rinsed & dried
1/2 of red onion (small); chopped thinly
1 lemon juice
1 Tbsp of creole mustard
2 lbs of potatoes (fresh); cut into 1/4-inch cubes
3/4 c of mayonnaise
4 eggs (hard-boiled); chopped
10 garlic cloves (fresh)
Salt & pepper
Olive oil
Directions:
Heat up the oven (400 degrees F). Pitch potatoes, as well as chopped garlic in one large bowl. Add olive oil, as well as a dash of ground pepper and salt. Mix it well.
Transfer the potatoes on a shallow baking dish; and then let it roast until tender but firm. This usually takes approximately 10-15 minutes. Once done, take out the potatoes, transfer to a large salad bowl and let it cool.
Meanwhile, prepare the dressing by combining lemon juice, mustard, salt, pepper, and mayonnaise in a blender. Process ’til mixture is smooth; and then add in the dried cilantro leaves. Process for about 10 seconds longer.
Pitch the eggs together with the sliced onions into the bowl with potatoes. Pour the dressing over the potato mixture; and then toss it well. Sprinkle with pepper and salt to taste.
Wrap in cling film and chill for a minimum of 2 hours. Garnish with a sprig of parsley prior to serving.
