Potato Deli Salad Recipe
Ingredients:
6-10 boiled potatoes; cut into salad-sized chunks
3 eggs (hard-boiled); diced
1/2 lb salami; cut into salad-sized chunks
1 chopped onion
2 cored & chopped apples
3 chopped dill pickles
3 dill pickles; sliced into salad-sized
3 Tbsps of mayonnaise (low-calorie)
3 Tbsps of red wine vinegar
Salt
Black pepper; freshly-ground
Paprika
Red bell pepper; slivered
Green bell pepper; slivered
Directions:
Prepare the salad by combining the eggs, pickles, potatoes, onions, and sliced apples in a mixing bowl (large).
Lightly fry the salami. Transfer it to a plate with paper towel to drain excess oil. Set it aside.
Prepare the dressing by whisking together red wine vinegar, paprika, salt and pepper in a small bowl.
Once salami is cool, combine it with the potato and egg mixture. Pour some dressing over the salad. Toss to evenly coat ingredients; and chill the salad for an hour or two. Top it with the slivered green and bell pepper prior to serving.
