Potato Caesar Salad Recipe
Ingredients:
5 pounds of potatoes
1 onion (medium-sized); chopped finely
8 slices of bacon; fried and crushed
2 eggs; hard-boiled and diced
1/4 cup of parsley (fresh); chopped
1/4 tsp ground black pepper
1/4 cup of freshly-squeezed lemon juice
1/4 cup of Parmesan, grated
1 tbsp of salt
1 tbsp of Worcestershire sauce
1/2 cup of salad oil (vegetable)
Directions:
Plunge the potatoes into a pot of boiling water lightly seasoned with salt. Cook it ’til tender but firm. Potatoes are ready if you pierce it with a fork and the fork easily goes through.
Drain once the potatoes are cooked. Let it cool. Remove the skin and discard. Cube the potatoes and transfer it into a large bowl. Add eggs, parsley, onions and bacon; then mix well.
In a smaller bowl, prepare the dressing. Whisk the salad oil, lemon juice, Worcestershire sauce, salt and Parmesan cheese. Pour this mixture over the salad, and then toss to evenly distribute the dressing.
