Pear Salad Recipe

Ingredients:

1 1/2 c of water
1 1/3 c of quinoa; rinsed
2 pcs of kumquats; cut into 2, seed removed & sliced
2 Tbsps of cilantro (fresh); coarsely chopped
1/4 c of olive oil
1/2 tsp of salt (kosher)
2.5 Tbsps of lemon juice
1 large bosc pear; skinned, core removed & sliced
1 cucumber; skinned, seed removed & sliced
1 c of watercress; cut shorter & sliced

Directions:

Combine water with quinoa in a medium-sized saucepan, and then let it boil. Stir often. Once it boils, reduce the heat to simmer for approximately 12 minutes ’til tender. Drain it; and then let it cool.

Meanwhile, make the kumquat dressing. Combine chopped cilantro, salt, chopped kumquats, olive oil, and fresh lemon juice altogether in one small mixing bowl. Let it stand for a few minutes (5 minutes).

Mix the pear, quinoa together with cucumber in a big salad bowl. Toss with kumquat dressing. Toss the salad well to coat ingredients evenly. Add watercress. Toss lightly. Cover with cling film and then chill fror a minimum of one hour prior to serving.
