Sugar Snap Pea Salad Recipe
Ingredients:
Salad ingredients:
4 c of bibb or butter lettuce
4 c of sugar snap peas; strings removed
1/2 c of basil (fresh); coarsely chopped
3 Tbsps of Italian flat leaf parsley; coarsely chopped
Dressing Ingredients:
3 Tbsps of shallots; minced
4 tsps of sherry vinegar
7 tsps of olive oil (Extra Virgin)
Salt & black pepper
Directions:
Whisk the dressing ingredients altogether in a small mixing bowl. Set it aside.
Meanwhile, plunge the sugar snap peas into boiling water. Blanch it ’til cooked (bright green but crunchy).
Drain it and then, drop into ice-cold water to stop cooking process. Once done, drain it again and transfer to a platter. Pat dry using paper towels.
Transfer the sugar snap peas to a large mixing bowl together with the chopped parsley and basil. Pour over some dressing. Toss well. Decoratively mound lettuce on a salad platter.
Top it with a generous helping of the sugar snap pea mixture; and then serve.
