Pasta Salad El Greco Recipe
Ingredients:
1/2 c of olive oil
1.5 tsps of basil; dried
1.5 tsps of garlic powder
2.5 c of macaroni (“elbow”); cooked
1/2 c of red wine vinegar
3/4 tsp of black pepper; ground
1.5 tsps of oregano; dried
3/4 tsp of refined sugar
3 c of mushrooms (fresh); sliced
15 cherry tomatoes; divided into 2
1 c of bell peppers (red); sliced
3/4 c of Feta cheese; crumbled
1/2 c of onions (green); chopped
1 can of black pitted olives (4 oz)
12 oz pepperoni (sliced); slice into strips
Directions:
Place the elbow macaroni, tomatoes, sliced mushrooms, sliced red bell peppers, scallions (green onions), Feta cheese, pepperoni, and black olives altogether in a mixing bowl (large). Set it aside.
Meanwhile, prepare the dressing. Combine the olive oil, powdered garlic, oregano, basil, vinegar, sugar and ground pepper altogether in a smaller bowl; and then whisk it well. Drizzle over the salad, and toss well ’til the salad ingredients are coated evenly.
Wrap with cling film; and then chill ’til ready to serve.
