Nutty Apple Celery Salad Recipe
Ingredients:
2 tbsp of freshly-squeezed lemon juice
1/2 tbsp of mustard (preferably ‘Dijon’)
1/4 c of Extra Virgin olive oil
3 red California apples (preferably crisp), slice into .25-inch juliennes
2 apples (green); sliced into .25-inch juliennes
4 celery ribs; sliced into .25-inch juliennes
1/4 c fresh parsley; chopped
1/3 peanuts (preferably the dry-roasted ones), chopped bristly
Directions:
Place the Dijon mustard and lemon juice into a medium mixing bowl, and then whisk. Add the oil sparingly, and continue whisking up until the mixture emulsifies.
Then, toss up the parsley, red apples, and celery. Chill for about 1-2 hours. Sprinkle the salad w/ peanuts prior to serving.
