Mushroom Pasta Salad Antipasto Recipe
Ingredients:
1 c of red peppers; roasted & sliced
4 c of pasta (cold); cooked
1 c of salami; sliced into small pieces (bite-size)
2 c of mushrooms (white); sliced
salt & pepper
1 jar of artichoke hearts (6 oz); marinated
1 c of provolone cheese; sliced into small pieces (bite-size)
1/4 c of Italian dressing
1/2 c of basil (fresh); chopped
Directions:
Pitch the cooked pasta, white mushrooms, roasted bell peppers, Provolone cheese, salami pieces, and undrained artichoke hearts altogether in one large mixing bowl.
Add some Italian dressing and toss well. Once done, add a dash of black pepper and salt to season. Sprinkle it with fresh basil. Wrap in cling film and chill for a minimum of one hour before you serve it.
