Mexican-Style Salad Recipe
Ingredients:
1 lb of chicken breasts (boneless skinless); shredded & cooked
2 eggs (hard cooked); chopped finely
1 c of salsa; strained
1/4 c of mayonnaise
1 tsp of lime peel; grated
1/2 c of sour cream
2 Tbsps onion; chopped finely
lettuce leaves
1/4 tsp of cumin; ground
1/2 tsp of chili powder
Directions:
Pitch the breast fillets, salsa, eggs, sour cream, mayonnaise, chopped onions, lime rind, chili powder and cumin into a large mixing bowl. Toss it well to coat evenly. Set aside.
Form a bed of torn iceberg lettuce in a salad bowl or shallow salad platter. Pour the breast fillet mixture over the lettuce. Cover with cling wrap and chill for a minimum of one hour prior to serving.
