Mediterranean Beef Fajita Salad Recipe

Ingredients:

1 bottle of Italian dressing (8 oz)
1 tsp cumin
Hot pepper sauce
1/2 lb if beef strips
1/2 cup of corn (canned)
1/2 cup of kidney beans, cooked
1/2 cup of onion (red), thinly sliced
1/2 cup of cheese (cheddar), grated (you may also use grated Parmesan as an alternative)
1 plum tomato, cut into small cubes
6 c of salad greens (may increase to 8 cups depending on preference)
2 c of tortilla chips, crushed

Directions:

Using a small mixing bowl – pour in the Italian dressing, add a small amount of hot sauce, then sprinkle cumin. Whisk well. Set aside 1/2 cup and reserve another 1/4 cup to use as marinade. Let the rest cool.

Marinate beef in another bowl using the 1/4 cup of dressing; and then leave it for an hour. Saute the marinated beef, then once cooked, use a slotted spoon to transfer it to another bowl. Let it cool.

When the beef is ready, toss it w/ the kidney beans, corn, onions, as well as the 1/2 cup of dressing.

Layer the greens on a plate; then top w/ the beef & beans mixture. Top w/ tomatoes, grated cheese and garnish with tortilla. Drizzle with additional dressing.
