Lentil Salad Delight Recipe
Ingredients:
1 c of lentils; dried
1 c of carrots; diced
1 c of onions (red); diced
1 tsp of salt
2 Tbsps of lemon juice
1 bay leaf
2 garlic cloves; minced
1/2 tsp of thyme; dried
1/2 c of celery; diced
1/4 c of parsley (fresh); chopped
1/4 tsp of black pepper; ground
1/4 c of olive oil
Directions:
Pitch the lentils, onions, bay leaf, thyme and carrots into a medium-sized pot. Pour in some water enough to cover the ingredients by an inch.
Boil it over medium-high heat, then lower the heat; then simmer – without the lid – ’til lentils are soft. Do not overcook as it may come out squashy. This usually takes about for another 15 minutes.
Once done, drain the lentil and veggie mixture; then remove the leaf. Transfer this to a large mixing bowl.
Pour the olive oil, celery, lemon juice, salt, pepper and chopped parsley over the lentil and veggie mixture. Toss well; and then serve immediately.
