Kidney Bean and Feta Cheese Salad Recipe
Ingredients:
2 stalks of scallions
1 can of kidney beans (15 oz)
1 red bell pepper; sliced
2 c of sliced cabbage
1 c of feta cheese; crumbled
1/3 c of parsley (fresh); chopped
1 garlic clove; minced
1 Tbsp of olive oil
2 Tbps of lemon juice
Directions:
Pitch ingredients altogether in one large clear salad bowl. Toss well to coat evenly. Wrap in cling film and chill for a minimum of one hour. Sprinkle with salt and pepper, to taste and garnish with a sprig of parsley before serving.
