KFC-Style Potato Salad Recipe
Ingredients:
2 lb of russet potatoes
4 tsps of sweet pickle relish
1 tsp of vinegar
4 tsps of sugar
1 c of mayonnaise
2 minced prepared mustard
2 tsps of white onion; minced
1 tsp of celery; minced
1 tsp of pimentos; diced
1/2 tsp of carrot; shredded
1/4 tsp of parsley; dried
A dash of salt
1/4 tsp of pepper
Directions:
Wash the potatoes and remove the skin. Plunge it into a pot of boiling water with salt. Cook ’til soft but still firm. Pierce it with a fork and if the fork easily goes through, it means that the potatoes are ready.
Remove the potatoes from the water, and then drain it. Let it cool. Cut it into 1/2-inch cubes, and transfer into a large mixing bowl. Set it aside.
Meanwhile, combine the vinegar, sugar, pickles, mayonnaise, mustard, minced onions, celery, pimiento, carrots, parsley, salt and pepper in a medium-sized bowl.
Whisk it ’til smooth. Combine this dressing with the potatoes; and then mix well ’til potatoes are evenly coated. Wrap in cling film; and then chill overnight prior to serving.
