Ham Salad w/ Peanut Dressing Recipe
Ingredients:
2 Tbsps of veggie oil
3/4 lb of ham (boneless)
1/4 c of peanut butter
1 Tbsp of soy sauce (reduced-sodium)
1 tsp of ginger; ground
1 garlic clove; chopped
1 Tbsp of sugar
6 c of endive (curly or romaine); torn
3 Tbsps lime juice (fresh)
1 cucumber (medium); seeds removed & sliced thinly
1/2 onion (red); sliced thinly
1 head lettuce (Boston or radiccio)
Directions:
Cut the ham into thin slices. Slightly cook the ham, set it aside, and keep it warm.
Meanwhile, prepare the dressing by combining peanut butter, veggie oil, lime juice, soy sauce, garlic, sugar, and ginger using a blender.
Process for about a minute or ’til desired texture. Warm up the dressing in a medium-sized saucepan placed over low heat. This usually takes about 1-2 minutes. Stir or whisk constantly to avoid sticking. Remove from the heat once smooth.
In a large bowl, combine the cucumber, sliced onions, Romaine lettuce and endives. Toss well.
To serve, form a bed of Boston or radiccio lettuce on medium-sized salad platters. Mound the vegetables on top of the lettuce leaves. Top it with sliced ham; then drizzle with peanut dressing.
