Grilled White & Sweet Potato Salad Recipe
Ingredients:
2 potatoes (large)
1 sweet potato
1 Tbsp sherry vinegar
4 Tbsps of olive oil (Extra Virgin)
1 Tbsp mustard (grainy)
1 bunch of green onions (scallions); finely chopped
Salt & pepper
Directions:
Prepare a stove-top grill over low heat. Wash and skin the potatoes. Slice it into 1/2-inch thick strips, and transfer to a large bowl. Pour 1/2 of the olive oil over it and season with salt and ground black pepper. Toss it well to evenly coat ingredients.
Grill the potatoes, turning it over as each of the sides brown. Do not char. Remove the potatoes from the heat once it is tender; and transfer to a separate bowl. Let it cool.
Once potatoes are ready, mix it with the remaining olive oil, chopped scallions and mustard. Toss well. Cover with cling wrap and chill prior to serving.
