Green Salad in Avocado Dressing Recipe

Ingredients:

1 avocado, cored and with shell removed
1 tbsp of freshly-squeezed lemon juice
1/2 c of mayonnaise
1/4 tsp of hot sauce (hot pepper)
1/4 c of Extra Virgin olive oil
1 garlic clove; finely chopped
1/2 tsp of salt
1 Romaine lettuce head; washed, drained and cut into bite-size pieces
3 oz of cheese (cheddar), grated
2 plum tomatoes, cut into small cubes
2 stalks of scallions, chopped
1/4 can of green pitted olives (2.25 oz)
1 c of corn chips, crumbled

Directions:

To make the dressing – blend the freshly-squeezed lemon juice, avocado, hot sauce, olive oil, salt, and chopped garlic with a food pocessor.

Stop processing only when the mixture is smooth; and then transfer to a clean, sterilized jar. Let it cool in the fridge.

Afterward, place the Romaine, grated cheese, cubed tomatoes, scallions, corn chips and olives into a larger bowl; then toss the salad in the dressing. Serve chilled.
