German-Style Potato Salad Recipe
Ingredients:
1 package of bacon (frozen vegetarian); thawed & chopped
1/4 c sugar
1 Tbsp of flour
1/3 c white vinegar
2 lb of white potatoes; boiled & cut into chunks
2/3 c hot water
8-10 onions (green); chopped finely in a cup
1/8 tsp of black pepper (ground)
1/2 tsp salt
Directions:
Using a nonstick skillet, fry the bacon over medium heat ’til brown and crisp. Crumble the bacon once it is crisp. Afterward, add the flour, then stir for approximately a minute.
Meanwhile, using a small mixing bowl – whisk hot water, vinegar, and sugar together ’til well mixed. Pour this into the bacon. Whisk constantly ’til the bacon sauce becomes thick; and then remove from the heat.
Transfer the potato chunks into a large mixing bowl. Pour the bacon sauce over the potatoes together with the scallions, pepper and salt. Salad may be served chilled or warm.
