German-Style Potato Salad Recipe #2
Ingredients:
1/4 tsp of pepper
1 lb of potatoes (3pcs medium)
1/2 c of vinegar
6 bacon strips; chopped
1/2 c of stock/bouillon
1 tsp of salt
1 tsp of refined sugar
onion (1 pc medium-size); sliced
1egg yolk (beaten)
Directions:
Wash the potatoes thoroughly. Boil until tender but firm. Drain once the potatoes are cooked. Let it cool. Remove the skin and discard.
Cut the potatoes into 1/4-inch cubes, transfer into a large bowl; then set aside.
Fry the bacon in a skillet over medium-high heat ’til brown and crisp. Afterward, add in the chopped onions; and cook ’til transparent.
Also add the vinegar, chicken stock, salt and pepper. Stir this mixture well and let it boil. Stir in the scrambled egg.
Remove the skillet from the heat after about 30 seconds; and then pour the mixture over the potatoes. Toss well before serving.
