Fruit & Nut Salad Recipe
Ingredients:
1 can of pineapple (8 1/4 oz); sliced
2 Tbsps of lemon juice
1 banana (medium); cut into 1/4 inch thin slices
3 c of cabbage; shredded
1 c of celery; sliced diagonally
1 can of mandarin oranges (11 oz); dried
1/2 c of walnuts; chopped
1/4 c of raisins
1 container of orange yogurt (8 oz)
1/2 tsp of salt
Directions:
Drain the pineapple, but set aside approximately 2 Tbsp of the juice. Slice the pineapples thinly into strips, and transfer to a large mixing bowl. Add the bananas into the bowl.
Meanwhile, in a separate medium-sized bowl, mix together the pineapple juice that you’ve previously set aside, with the freshly squeezed lemon juice. Whisk well and pour into the bowl with pineapples and bananas. Toss well.
Add the shredded cabbage, sliced celery, raisins, mandarin oranges, and walnuts into the mixture; and then lightly toss.
Blend the salt and yogurt together; then pour into the fruit and and nut mix. Toss it well to evenly coat ingredients. Wrap with cling film and chill before serving.
