Fried Chicken Salad Recipe
Ingredients:
1 pound of chicken breast fillet, skinned and cut into small cubes
Oil
1/2 cup of fresh celery, diced
1 cup of mayonnaise
1/4 tsp of salt
1/4 tsp of ground black pepper
1/2 tsp refined sugar
1/2 tsp of onion powder
1/4 cup almonds, toasted and sliced thinly
1 tbsp of freshly-squeezed lemon juice
1 cup of pineapple, crushed and drained
Alfalfa sprouts
Directions:
Fry the chicken over medium heat until light brown, but do not burn. Once cooked, remove it with a slotted spoon and transfer on a plate with paper towel to drain excess oil.
In a separate platter or bowl, mix the chicken with celery, mayonnaise, salt, pepper, sugar, onion powder, freshly-squeezed lemon juice, and pineapple. Use a spatula (rubber) to help with mixing.
Form a layer of alfalfa sprouts on a plate followed by chicken celery mixture, and then top w/ toasted almond slices. You may also use pineapple’s shell (or skin) as a more exciting alternative to the salad platter.
