Dragon Potato Salad Recipe

Salad Ingredients:

6 medium-sized potatoes (approximately 2.5 lbs); peeled
4 bacon slices; cooked crisp, then crumbled
3/4 c “bok choy” leaves; chopped
1 bell pepper (red), diced
1/2 c of scallions; finely-chopped
1/4 c of cilantro; chopped

Dressing Ingredients:

1 1/3 c of mayonnaise
1/8 tsp of salt
1 Tbsp of soy sauce
1 tsp of sesame oil – may increase this to 2 tsps depending on preference
1 tsp of refined sugar
1/2 tsp of hot mustard powder – may increase this to 1/4 tsp depending on preference

Directions:

Plunge the peeled potatoes into a pot of boiling water lightly seasoned with salt. Cook it until tender but firm.

Potatoes are ready if you pierce it with a fork and the fork easily goes through.

Drain once it is cooked; and then let it cool. When ready, cut these potatoes into chunks (salad-size); and combine with bacon, “bok choy”, red bell pepper, scallions, and cilantro in a mixing bowl.

Prepare the dressing by combining the mayonnaise, salt, soy sauce, sesame oil, sugar, and mustard powder in a small mixing bowl.

Whisk until soft. Pour the dressing over the potato mixture; and then toss well to coat ingredients evenly. Chill before serving.
