Crab Key West Salad Recipe
Ingredients:
Salad Ingredients:
3 c of spinach leaves (torn); rinsed & drained
2 c of lettuce (torn); rinsed & drained
1 c of cabbage; shredded finely
2 oranges (medium), skinned & sectioned
12 oz crabmeat; cooked & sliced into small pieces (bite-sized)
1 onion (small, red); chopped & cut into rings
Dressing Ingredients:
1/2 tsp orange zest; grated
2 tsps of olive oil
3 Tbsps of orange juice
1/4 tsp of dried tarragon
2 Tbsps of balsamic vinegar
Directions:
Mix salad ingredients altogether in a big mixing bowl. Toss lightly, then set it aside.
Meanwhile, combine all dressing ingredients in a medium-sized glass jar. Lock it up with the lid; and then shake vigorously.
Drizzle the salad with dressing and toss well to coat the mix evenly. Chill for a minimum of one hour prior to serving
