Corn-y Black Bean Salad Recipe
Ingredients:
1/2 c of olive oil
1/3 c of freshly-squeezed lime juice
1 garlic clove; finely chopped
1/8 tsp of cayenne pepper; ground
1 tsp of salt
1.5 c of corn kernels; frozen
2 cans of black beans; washed & drained (15 oz each)
1 avocado; shell removed, cored and cut into small cubes
1 bell pepper (red); chopped finely
2 plum tomatoes, diced
6 stalks of scallions, chopped
1/2 cup of cilantro (fresh), chopped
Directions:
Lock the chopped garlic, cayenne, olive oil, lime juice, and salt inside a jar. Shake vigorously, then set aside.
Meanwhile, place the black beans, cubed avocado, plum tomatoes, cilantro, scallions, and corn into a bowl or on a clear serving platter.
Pour the dressing over to the black bean salad and toss well before serving.
