Classic Salad and Quesadillas Recipe

Ingredients:

Dressing Ingredients:

1/4 teaspoon of lime rind; grated
3 Tbsps of lime juice
3/4 tsp of chili powder
1/2 tsp of coriander; ground
1/2 tsp of sugar
1/2 tsp of salt
4 tsps of olive oil

Salad Ingredients:

1 lettuce (romaine); leaves cut into 3/4-inch strips crosswise
2 stalks of scallions; sliced thinly
6 oz cheese (shredded, preferably Monterey Jack) w/ jalapeno chilis (1.5 cups)
8 flour tortillas (6 inches each)
cherry tomatoes (12oz); chopped into 2 or 4
2 onions (green); sliced thinly
1 avocado (small, 8 oz); sliced into half-inch wedges

Directions:

Combine dressing ingredients altogether in one medium-sized bowl, and whisk thoroughly ’til mixed well. Set aside.

Meanwhile, pitch the Romaine lettuce, scallions, avocado, and tomatoes in a larger bowl. Pour some dressing over the salad, then toss lightly. Cover with cling wrap and chill ’til ready to serve.

Afterward, place a nonstick skillet (about 10 inches) over medium heat. Once it is hot, place tortilla. Layer 1/4 of the cheese on top of the tortilla.

Cover it with a 2nd tortilla, then lightly press. Turn it over once one side of the quesadilla is lightly toasted. Let it cook ’til the cheese melts. This usually takes about 2 minutes longer.

Slice the quesadilla into about 4-6 wedges and transfer to a large platter. Mound a generous helping of salad on top of it prior to serving. Do the same procedure with the remaining tortilla pieces and cheese.
