Chunky Apple Salad Recipe
Ingredients:
1 can of pineapple chunks (20 ounces)
2 qt of red apples; unpeeled and chopped
2 c of grapes (preferably green and seddless); divided into two
1.5 cups of pecan nuts; toasted
1 c of celery; chopped
1/2 c of fresh parsley (fresh); chopped
1/2 stick of butter
1/4 cup of refined sugar
1 tbsp of freshly-squeezed lemon juice
2 tbsp of cornstarch
1 cup of mayonnaise
Water
Directions:
First, drain the pineapple chunks, but reserve the pineapple juice. Set aside the chunks, as you get the dressing ready.
Mix water and cornstarch together in a mixing bowl (small). Whisk until smooth, and then set aside. Afterward, put the butter, lemon juice, pineapple juice, as well as the sugar into a small saucepan.
Place saucepan over medium heat. Stir the mixture every now and then until it boils.
Pour the water and constarch mixture into the simmering juice. Lower the heat, then whisk until it is smooth and syrupy. Chill the dressing and add mayonnaise.
Finally – toss the apple, grapes, celery, parsley, and chunks using a salad bowl (large) – together with the dressing.
