Chinese Chicken Salad Recipe
Ingredients:
Dressing Ingredients:
1 tsp of sesame oil
1 Tbsp of vinegar (rice wine)
1/2 c of corn syrup
1 Tbsp of sugar (light brown)
4 tsps of sugar (granulated)
3 Tbsps of vinegar (white distilled)
A dash of garlic powder
2 Tbsps of pineapple juice
1 Tbsp of soy sauce
1/4 tsp of mustard; ground
1/2 tsp of sesame seeds
1/4 tsp of ginger; ground
1/8 tsp of paprika
1/8 tsp of salt
A dash of black pepper; ground
1/2 c of veggie oil
Salad Ingredients:
1 c of rice noodles
1 head of lettuce (iceberg); sliced
1 c of almonds; roasted & sliced
4 fillets (chicken breast)
4 c of lettuce (red leaf); sliced
1 1/3 c of orange (canned mandarin segments)
Directions:
In food processor, combine all of the ingredients for sesame dressing excluding sesame seeds and veggie oil. Process until coarsely blended.
Gradually dribble veggie oil for the mixture to emulsify. Add the sesame seeds; then process for about 5-10 seconds more. Transfer the mixture to a jar with tight-fitting lid; and then refrigerate.
Meanwhile, grease each breast fillet with veggie oil. Rub lightly with pepper and salt. Grill the breast fillets over medium flame ’til light brown. Once cooked, let the breast fillets cool; and then dice it. Set aside.
Layer the following in chronological order – 1st, the iceberg lettuce; 2nd, the red leaf lettuce; 3rd, diced chicken; 4th, oranges; 5th, rice noodles; then 6th, sliced almonds – on each of four (4) large separate bowls. Drizzle the salad with dressing before serving.
