Chicken-Sesame Salad Recipe
Ingredients:
Dressing Ingredients:
1/4 c of veggie oil
3 Tbsps of rice vinegar (unseasoned)
4 Tbsps of ginger (fresh); minced
1 Tbsp of mustard (Dijon)
Salt and pepper
Chicken Marinade Ingredients:
1/2 c of mustard (Dijon)
1/3 c of maple syrup (pure)
2/3 c of sesame seeds (preferably black & white mixture)
1 1/3 lbs of chicken tenders
3 Tbsps of veggie oil
Salad Ingredients:
1/2 hothouse cucumber (English); unskinned, thinly chopped crosswise
1 5 oz bag of mixed greens
2 tomatoes (large); each sliced lengthwise into wedges
Directions:
Combine the vegetable oil, rice vinegar, ginger, mustard, pepper and salt in one small mixing bowl. Whisk well until smooth; and then set aside.
Meanwhile, blend the mustard and maple syrup thoroughly in a separate bowl. Mix the chicken with it and marinate for an hour or two. Once ready, remove the tenders from the marinade; and shake excess liquid off.
Sprinkle some sesame seeds on a platter, together with pepper and salt. Mix it well. Press the chicken tenders on the platter ’til each piece is evenly coated.
Place a large skillet (nonstick) with about a tablespoon of oil over medium-high heat. When the oil is hot, saute the tenders ’til cooked.
This usually takes about 3-4 minutes. When done, place the cooked tenders on a plate. You may cook in batches in case skillet is not big enough.
In another large bowl, pitch the mixed salad greens, tomatoes and cucumber. Toss it well to coat ingredients evenly. Equally distribute it among 4 salad platters. Top each with cooked tenders. Pour over some dressing prior to serving.
