Chicken Salad with Walnut Vinaigrette Recipe
Ingredients:
1/4 c of raw walnuts
1 pc of onion; chopped
2 chicken breast fillets
1 stalk of celery
chicken stock
6 pcs of peppercorns
3 Tbsps of olive oil (Extra Virgin)
3 Tbsps of balsamic vinegar
Mixed greens: watercress, arugula, red leaf lettuce, radicchio; rinsed, drained and torn into bite-size pieces
Directions:
Boil the breast fillets in water together with peppercorns, celery and onions for about 5 minutes. Once the chicken meat lightens, reduce the heat and simmer for about 15 minutes more untill tender.
Drain the breast fillets and let it cool. Once the chicken is ready, cut it into 1/4-inch strips and set aside.
Meanwhile, make the dressing by combining the vinegar, walnuts, and olive oil in a small saucepan. Place it over medium heat and whisk well ’til the mixture thickens.
Distribute a generous amount of mixed greens on about 4 salad platters. Assemble the breast fillet strips on top, and drizzle with the walnut dressing. Serve immediately.
