Chicken Salad with Mango Chutney Recipe
Ingredients:
2 c of chicken; diced & cooked
1/4 c of chutney (mango)
1 golden delicious or gala apple (small); diced & core removed
1/4 c of celery; diced
Salt & pepper
1/4 to 1/3 c of mayonnaise (low-fat)
1/4 c of onion (red); diced
Directions:
Combine the chicken, chutney, apples, celery, mayonnaise, onions, pepper and salt in a large bowl. Toss it well until ingredients are evenly coated. Wrap with cling film and chill. May be used as filling for croissants or sliced wheat bread; or may be used as topping for mixed greens.
