Chicken Salad w/ Mandarin Orange Recipe
Ingredients:
1 can of mandarin orange (11 oz); juice intact
1 medium head of Boston lettuce
2 Tsbps of mayonnaise
1/4 c of sour cream
1/8 tsp of black pepper (freshly ground)
1/8 tsp chili (powdered)
1/4 tsp of salt
1 Tbsp lime juice; freshly-squeezed
3 oz of Cheddar cheese; diced
1/3 c of bacon; cooked crisp & crushed coarsely
1/3 c of onion (red); diced
1/2 chicken breast fillet; boiled & thinly-sliced
Directions:
Clean the lettuce, then dry w/ paper towel. Cut into bite-size pieces and place in a mixing bowl (large).
Drain the oranges but set aside about 2 Tbsp of the juice. Combine the sour cream, salt, mayonnaise, pepper, lime juice, reserved juice (orange), and powdered chili in a smaller bowl. Whisk well ’til smooth.
Combine the cheddar cheese, oranges, bacon, onions, and sour cream dressing with the lettuce. Toss well to evenly coat the ingredients. Top it w/ the breast fillet prior to serving.
