Chicken Salad Mexicano Recipe
Ingredients:
Iceberg (or Romaine) lettuce
1 lb of chicken breast fillet; skinned, boiled & shredded
2 large eggs; hard-boiled & chopped finely
1 c of salsa (preferably “Chi-Chi’s”)
1/4 c of mayonnaise
1/2 c of sour cream
2 tsps of white onions; finely-chopped
1 tsp of lime rind; grated
1/2 tsp powdered chili
1/4 tsp cumin powder
Directions:
Form a bed of iceberg lettuce on a salad platter. Set aside. Combine the rest of the breast fillet, chopped eggs, salsa, mayonnaise, sour cream, chopped onions, lime rind, chili powder and cumin powder in a bowl (large), and toss well.
Place this mixture over the lettuce.
