Chicken Grill Salad from Houston Recipe

Ingredients:

Salad Ingredients:
2.5 c of grilled chicken breast fillet; cut into thin slices
1/2 head of iceberg lettuce; washed, drained & torn into bite-sized pieces
1/2 head of Romaine lettuce; washed, drained & torn into bite-size pieces
1/2 bunch of watercress; washed, drained & torn
Tortilla strips; fried crisp

Lime Dressing:
7.5 Tbsps of honey
1/2 c of lime juice
1 tsp of pepper
4 tsps of honey mustard
2 clove garlic; chopped
1/2 tsp of salt
4 Tbsps of veggie oil

Peanut Sauce Ingredients:
1 Tbsp of ginger; ground
4 Tbsps of Peanut butter
2 tsps of sesame oil
4 Tbsps of soy sauce
4 Tbsps of water (hot)

Directions:

Mix all dressing ingredients in a small bowl. Whisk well ’til smooth; and then set aside. Do the same for the peanut dressing ingredients in a separate bowl.

Throw in all the salad ingredients in a larger bowl. Pour the lime dressing over chicken salad; and then toss well. Drizzle with peanut dressing prior to serving.
