Warm Chicken Salad Recipe
Ingredients:
2.5 c of chicken meat; chopped & cooked
2 c of celery; chopped
1/2 c of almonds; chopped & salted
1/4 c of bell pepper (green); chopped
2 Tbsps of chopped onion
3/4 tsp of salt
1/2 c of mayonnaise
2 Tbsps of pimento peppers; chopped
2 Tbsps of lemon juice
1/3 c of cheese (Swiss); shredded
3 c of potato chips; crushed
Directions:
Warm up the oven. Heat it up to 350 degrees F. Throw the celery, chicken meat, almonds, onions, bell peppers, lemon juice, mayonnaise, pimiento, and salt into a large mixing bowl. Mix thoroughly and transfer to a casserole (1.5 quarts).
Top the salad with the shredded Swiss cheese; then sprinkle with crushed (or crumbled) potato chips. Lastly, bake the salad until the cheese has melted. This usually takes 25-30 minutes.
