Caprese Salad Recipe
Ingredients:
1 lb of mozzarella cheese; sliced into 3/4 inch cubes
salt & pepper
1 onion (red); sliced
1/4 c of basil; chopped & fresh
4 tomatoes (medium ripe); quartered lengthwise
1/3 c of olive oil (Extra Virgin)
1/3 c of vinegar (balsamic)
Directions:
Pitch all the ingredients in a big mixing bowl; then toss it well altogether.
Cover with cling wrap; then let it cool in the chiller for a minimum of one hour.
Distribute to smaller salad platters and toss it again prior to serving.
