Hearty Potato Salad Recipe
Ingredients:
2.5 lbs of potatoes; diced into 1/4-inch cubes
8 oz of thickly-sliced bacon; cooked crisp & crumbled
3 eggs; hard-boiled, peeled and diced
4 oz of dill pickles
2 Tbsps of vinegar
1/2 c of beef or veggie broth
Salt & pepper
1 Tbsps of parsley
Bacon drippings
Directions:
Place the cooked potatoes in a large salad bowl. Combine the chopped eggs, chopped parsley (or chives), pepper, vinegar and salt with the cooked potatoes. Toss with hot vegetable or beef broth ’til mixed well.
Then, sprinkle with crumbled bacon and drizzle with bacon drippings prior to serving. Just add more salt or pepper as needed. Serve the salad while it is hot.
