Cool Red Potato and String Bean Salad Recipe
Ingredients:
1 lb of red onions; halved & cut lengthwise into 1/4-inch slices
1 Tbsp of salt
1 tsp of Oregano
1 tsp of white ground pepper
2 lbs of string beans (frozen); thawed
2.5 lbs of potatoes (red)
3 oz of white wine vinegar
4 oz of Extra Virgin olive oil
Directions:
Plunge potatoes into a pot of lightly salted boiling water. Cook it until tender but firm. This usually takes approximately 10-15 minutes.
If you pierce it with a fork and the fork easily goes through, it means that the potatoes are ready. Remove the potatoes from the water, then transfer into a large bowl.
Cover it with cling wrap and refrigerate ’til ready to use.
Boil some water and blanch string beans for 2-3 minutes. Drain and transfer it into a small bowl. Cover with cling wrap, then refrigerate ’til ready to use.
Whisk the olive oil, white wine vinegar, oregano, salt and freshly ground black pepper altogether in a small bowl ’til thoroughly mixed. Set aside.
Pitch the string beans and onions in the bowl with potatoes. Pour the dressing over and toss well to coat ingredients evenly. Chill for a minimum of one hour. Garnish with a sprig of parsley before serving
