Waldorf Hotel Style Waldorf Salad Recipe
Ingredients:
Salt
Black pepper; ground
1 c of walnuts; halved
1/4 c of yogurt (plain)
1/2 c of mayonnaise
1 tsp of mustard ( prepared )
1 pinch mustard (dry)
Juice from 1/2 lemon
4-6 apples (tart); skinned, core removed, & diced
1-2 c of celery (inner ribs, white parts); chopped finely
1 Tbsp of lemon juice (fresh)
2 Tbsps of olive oil
2 bunches of tender greens (arugula, baby kale, pepper cress); rinsed & dried
Directions:
Warm up the oven (325 degrees F). Distribute walnuts evenly on a baking dish. Roast it for approximately 4-5 minutes. Once walnuts are toasted lightly, remove it from the oven and let it cool.
Meanwhile, mix the yogurt, the juice from 1/2 lemon, mustard, and mayonnaise altogether in one large mixing bowl. Whisk until smooth; and then add apples, celery, salt, plus pepper. Mix well.
Pitch the mixed greens into a big salad bowl. Pour olive oil together with remaining lemon juice over the mixed greens. Add a dash of salt, as well as a pinch of pepper; then toss it well.
Equally distribute the mixed greens among different plates (approximately four). Top the mixed greens with apple mix. Sprinkle it with walnuts. Garnish with celery (reserved) prior to serving.
