Reuben Salad w/ Pumpernickel Croutons Recipe
Ingredients:
1 Sauerkraut (8 oz); drained
1 medium-sized tomato; diced
1.25 c of dressing (Thousand Island)
8 c of iceberg lettuce; torn
1/2 c of green onions; sliced
3/4 lb of deli corned beef; sliced into 1/8-inch strips
6 oz of Swiss cheese; shredded or grated
Pumpernickel croutons
Directions:
Form a bed of drained sauerkraut, chopped scallions, lettuce leaves, corned beef and diced tomatoes in a shallow salad platter (9×13 inches). Carefully pour the Thousand Island dressing, then chill for a minimum of one hour
Top the salad with croutons and sprinkle it with shredded cheese before serving
