Potato Salad with Beer Recipe
Ingredients:
6 pcs of potatoes (medium)
1 stalk celery; chopped
4 slices of bacon
1 tsp of salt
1 Tbsp onion; sliced
2 Tbsps of flour (unbleached)
1 Tbsp of sugar
1/2 tsp of dry mustard
2 Tbsps of butter
1 c of beer
2 Tbsps of parsley (fresh); chopped
1/2 tsp of Tabasco hot pepper sauce
Directions:
Cut the potatoes into salad-sized cubes; then set it aside in a large bowl. Meanwhile, combine the bacon, celery, onion, and salt in a small separate bowl. Mix we and then set it aside.
Meanwhile, mix flour and butter into a small pot together with sugar and mustard.
Place the mixture over medium heat. Whisk it until smooth; then gradually add Tabasco and beer. Whisk the mixture constantly while bringing it to a boil. Once it boils, remove it from the heat.
Pour the mixture over the potatoes. Add parsley, then toss it lightly. Cover with cling film; then let it stand for a minimum of one hour. Once ready, toss the potatoes lightly with the bacon mix. Top it with a sprig of parsley prior to serving.
