Baked Savory Potato Salad Recipe
Ingredients:
8 pieces of potatoes, washed and peeled
1/2 lb of bacon stips
1 lb of cheese, thinly sliced
1/2 red onion, finely sliced
1 c of mayonnaise
Salt and ground black pepper
1/4 cup of pitted black olives, sliced
Directions:
Warm up the oven, then set it to 325 degrees Fahrenheit. Next, prepare the baking dish (9×13 inches) by spreading a thin layer of butter onto the bottom surface.
Afterward, plunge the 8 potatoes into a pot (large) of boiling water with salt. Cook it until soft but make sure that it is firm still.
If you pierce it with a fork and the fork easily goes through, it means that the potatoes are ready. Remove the potatoes from the water, and then drain it.
Let it cool, then cut it into .25-inch thick slices, then set it aside.
Meanwhile, on a hollow nonstick skillet – fry the bacon over medium heat ’til golden brown. Remove it from the skillet once cooked. Put the bacon on a plate with paper towel to drain the excess oil. Finely chop it, then set it aside.
Lastly, to prepare the salad – use a large bowl to mix the cheese, mayonnaise, salt, ground black pepper, onions, and potatoes.
Distribute the salad evenly onto the baking dish that you have prepared previously. Sprinkle the salad with olives, top it with chopped bacon, then bake for about 60 minutes.
This recipe is best served hot.
